This is the New Orleans Cut. They put it on the verbal menu (in other words, you have to ask for it, preferably a few days ahead of time), but it’s almost always available. Standard New York Strip at Mr. John’s. Imagine this about half again as thick, then cut across into two steaks the size of a filet.”
